En laboratoire, son effet chez les animaux a \u00e9t\u00e9 \u00e9tabli en observant que l\u2019administration de cette mol\u00e9cule chez des souris pr\u00e9vient l\u2019apparition de tumeurs caus\u00e9es par divers agents canc\u00e9rig\u00e8nes. Il est important de noter que la maximisation des bienfaits du curcuma repose sur son association \u00e0 la pip\u00e9rine, une mol\u00e9cule que l\u2019on retrouve dans le poivre. On a \u00e9galement observ\u00e9 que son absorption s\u2019accro\u00eet en pr\u00e9sence de gingembre et de cumin.<\/p>\n<p class=\"p1\" style=\"color: #0167aa;\"><strong>BROCOLI :<\/strong> Les l\u00e9gumes crucif\u00e8res (dont le chou, le brocoli et le radis) repr\u00e9sentent l\u2019une des familles de v\u00e9g\u00e9taux les plus \u00e9tudi\u00e9es, ayant fait l\u2019objet de plus de 20\u2009000 articles scientifiques au cours des derni\u00e8res d\u00e9cennies. Ils sont les seuls v\u00e9g\u00e9taux \u00e0 contenir des quantit\u00e9s importantes de glucosinolates, des compos\u00e9s phytochimiques qui sont activ\u00e9s par la mastication. Pr\u00e9chauffer le four \u00e0 425 \u00b0F.<\/p>\n<p class=\"p1\">2. Pr\u00e9parer le couscous; dans un petit bol, couvrir la semoule en versant \u00bd tasse d\u2019eau chaude ou de bouillon. Recouvrir d\u2019un linge ou de pellicule plastique pour \u00e9viter que la vapeur s\u2019\u00e9chappe. Apr\u00e8s 5 minutes, d\u00e9faire le couscous \u00e0 l\u2019aide d\u2019une fourchette.<\/p>\n<p class=\"p1\">3. Pour la sauce \u00e0 salade, combiner l\u2019huile d\u2019olive, le jus d\u2019orange, le zeste, l\u2019ail et le curcuma. Saler et poivrer. Bien m\u00e9langer.<\/p>\n<p class=\"p1\">4. Napper le brocoli de la moiti\u00e9 de la sauce \u00e0 salade; r\u00e9server le reste. Incorporer les amandes et les dattes.<\/p>\n<p class=\"p1\">5. Sur une plaque \u00e0 p\u00e2tisserie tapiss\u00e9e de papier sulfuris\u00e9, \u00e9tendre uniform\u00e9ment le couscous pr\u00e9par\u00e9. Couvrir du brocoli napp\u00e9 de sauce, et cuire pendant environ 10 \u00e0 15 minutes, ou jusqu\u2019\u00e0 ce que le brocoli commence \u00e0 brunir.<\/p>\n<p class=\"p1\">6.
