Cinnamon Tangerine Baked Tofu

INGREDIENTS :
- 1 package Extra Firm Tofu (large dice)
- 1 can Chickpeas, drained and rinsed
- 1 cup Onion, sliced
- 1 cup bell peppers, sliced
- 2 cloves Garlic, minced
- 1 tbsp Ginger, minced
- 4 tbsp Tangerine/Orange Juice
- 1 tbsp Tangerine/Orange Zest
- 1 tsp Ground cinnamon
- 1/4 tsp Ground Turmeric
- 2 tbsp Olive Oil
- 1/2 tsp Salt and Black Pepper
DIRECTIONS:
- Preheat the oven to 425°F (220°C).
- Line a roasting dish or large oven safe saute pan, with parchment paper.
- Add all your ingredients together in the dish/pan, and gently toss together well until evenly dressed.
- Roast in the oven for about 20 to 25 minutes or until the tops are golden brown.
- Top with a squeeze of fresh lime juice and cilantro or mint. Serve with couscous.
