Cinnamon Tangerine Baked Tofu

INGREDIENTS :

  • 1 package Extra Firm Tofu (large dice)
  • 1 can Chickpeas, drained and rinsed
  • 1 cup Onion, sliced
  • 1 cup bell peppers, sliced
  • 2 cloves Garlic, minced
  • 1 tbsp Ginger, minced
  • 4 tbsp Tangerine/Orange Juice
  • 1 tbsp Tangerine/Orange Zest
  • 1 tsp Ground cinnamon
  • 1/4 tsp Ground Turmeric
  • 2 tbsp Olive Oil
  • 1/2 tsp Salt and Black Pepper

DIRECTIONS:

  1. Preheat the oven to 425°F (220°C).
  2. Line a roasting dish or large oven safe saute pan, with parchment paper.
  3. Add all your ingredients together in the dish/pan, and gently toss together well until evenly dressed.
  4. Roast in the oven for about 20 to 25 minutes or until the tops are golden brown.
  5. Top with a squeeze of fresh lime juice and cilantro or mint. Serve with couscous.
