It is important to ensure we eat enough protein to help prevent further muscle loss and to help develop and maintain strength to get through treatment and recovery.
- One pot meals: Preparing a recipe that requires many steps, pieces of equipment and cookware, just means that you’ll be spending a lot more time and energy cleaning up. Soups, stews and slow braised meals are great to prepare all in one pot or dish. This will ensure that you can enjoy your meal without worrying about too many dishes afterwards.
- Top with your family’s favourite toppings like cilantro, sour cream or guacamole. For a leaner option, use chicken breast.
One Dish Chicken Fajitas

INGREDIENTS :
- 6 each Chicken Thighs
- 2 each Tomatoes, diced
- 1 each Bell pepper, sliced
- 1 cup Onion, sliced
- 4 cloves Garlic, sliced
- 1/2 cup Frozen Corn
- 1 can Black Beans, drained and rinsed
- 1 each Lime, juice
- 6 Tortillas (whole wheat or regular)
Honey Chili Rub
- 2 tbsp Tomato Paste
- 2 tbsp Honey
- 1/2 tsp Chili Flakes (optional)
- 3/4 tsp Sea Salt
- 3/4 tsp Ground Black Pepper
METHOD:
- Preheat oven to 375°F (190°C).
- In a small bowl mix tomato paste, honey, chili flakes, salt and black pepper.
- Place chicken thighs into oven proof dish and spread the rub onto the chicken.
- Add tomatoes, red pepper, onion, garlic, corn and beans to dish.
- Cover dish with foil and bake for 1 ½ hours.
- Shred chicken and stir in lime juice. Mix all ingredients together and serve on tortillas.
